Pasteurized Egg White

Pasteurized Egg White is separated albumen from fresh hen eggs, pasteurized and packed. It does not contain added salt, preservatives, additives, colors or flavors.
Applications:
Pasteurized egg white (also known as egg albumen) is used in all recipes requiring egg white for its aerating, whipping and foaming properties. Ideal for use in Pavlovas, meringues, confectionery and nougats. Pasteurized Egg White is also an excellent binding agent, suitable for use in small goods and fish products. It can be used as a glaze for pastry and biscuits.
Storage and shelf life:
Chilled Liquid: 1C to 4C, shelf life 10 days from date of dispatch
Frozen: 15C to 18C and has a shelf life of two years from the date of manufacture.

Pasteurized Whole Egg

Pasteurized Whole Egg is prepared from fresh hen eggs.
Applications:
For use in all recipes requiring liquid whole egg such as cakes, biscuits, sponges, custard, quiches, omelets, pasta, scrambled eggs and pies. It is also an excellent egg wash for fried foods.
Storage and Shelf Life:
Chilled Liquid: 1°C to 4°C, shelf life is 10 days from date of dispatch
Frozen: 15°C to 18°C, two years from manufacture

Pasteurized Egg Yolk

Egg Yolk is prepared from fresh egg yolk. It does not contain added salt, preservatives, additives, colors or flavors.
Applications:
Use in recipes requiring emulsification properties of egg yolk. It can be used in mayonnaise, ice cream, hollandaise sauce and custards. It can also be used as a thickening in sweet or savory sauces.
Storage and shelf life:
Liquid 1°C and 8°C. Ten days from date of dispatch.
Frozen: 15°C to 18°C, two years from the date of manufacture.

Pasteurized 10% Salted Egg

Pasteurized 10% Salted Egg Whole & Yolk is prepared from pasteurized egg yolk with 10% salt added. The frozen product thaws to a thick liquid ready for use.
Applications:
The product is used in all recipes requiring egg yolk (for its emulsification and stabilizing properties), and salt. It is used in savory dressings, mayonnaise, sauces and foods containing salt.
Storage and Shelf Life: 
Liquid: 1°C to 4°C, 25 days from date of dispatch.
Frozen: 15°C to 18°C shelf life is two years from the date of manufacture.

Pasteurized 10% Salted Egg

Egg 24/7 Sugared Egg contains pasteurized egg; whole or yolk with 10% added sucrose. This product thaws to an even liquid ready for use.
The product is used in all recipes requiring egg yolk (for its emulsification and stabilizing properties), and sugar. It is used in ice cream, custards, other sweet sauces and liqueurs.
Storage and Shelf Life:
Frozen: 15°C to 18°C, and shelf life is two years from the date of manufacture.
Thawed: 2°C to 4°C. 25 Days.

Egg Whites (Hi-Whip)

  • Liquid Egg Whites with Whipping Agent mixed in to create a strong standing whip/meringue.
  • For Baking, Crèmes, Spreads, Meringues and cakes.
  • Holds body longer, making it better for display purposes.

Whole Egg (w/Citric Acid)

  • Maintains a bright yellow longer even when on display.
  • Slightly improved shelf life.
  • Great for fast food, cafeteria, buffet and food service.
